Jackenstein is the second-to-last boss of Sir Hammerlock's Big Game Hunt. He appears in the Sunken Cargo Room of the H.S.S. Terminus. He can be considered the final true boss of the campaign, as Professor Nakayama doesn't exactly put up much of a fight.
